My spin on classic snickerdoodles! Soft and chewy with the spicy-sweet flavors of cinnamon and sugar with notes of espresso. Perfect for any coffee lover!
Ingredients

2 ¾ cups flour

2 sticks unsalted butter

½ cup sugar

¾ cup light brown sugar

1 egg
-
1 teaspoon coffee extract
-
1 teaspoon vanilla extract

1 teaspoon baking powder
-
1 teaspoon cream of tartar

¾ teaspoon salt

1 teaspoon cinnamon

1 tablespoon espresso powder

¼ cup sugar
-
2 teaspoon cinnamon

2 teaspoon espresso powder
Sugar Coating
Directions
Preheat oven to 375 degrees F.
Whisk together all of the dry ingredients in a large bowl. (flour, baking soda, cream of tartar, salt, cinnamon, espresso powder.)
in a separate bowl cream the butter and sugars together until light and fluffy.
Add in eggs one at the time. Mix in the extracts. Make sure to scrape down the bowl!
Add the flour mixture to the wet ingredients and beat on low until the batter is well combined.
In a small bowl mix all of the sugar coating ingredients together for rolling.
Using a cookie or ice cream scoop portion out your cookie dough. Roll into balls.
Roll the cookie dough balls in the sugar coating mixture until well coated.
Transfer the balls of dough to a lined baking sheet. Bake at 375 for 10 minutes.
Remove from oven and allow to cool on a cooling rack. Place a coffee bean on top while they are still warm as a cute little garnish!
